In Japan, jasmine flower sencha is considered a luxury tea, often reserved for special occasions or as a gift for someone special.

The story of jasmine flower sencha is rooted in Japanese history and culture. According to legend, the tea was first introduced to Japan by a Chinese Buddhist monk named Eisai, who is also credited with bringing Zen Buddhism to Japan. Eisai is said to have brought jasmine flowers with him from China and used them to scent the green tea that he brought to Japan.

Over time, jasmine flower sencha became popular among Japanese tea drinkers and was prized for its delicate aroma and complex flavor. Today, jasmine flower sencha remains a popular tea in Japan and is often enjoyed as a calming and soothing beverage.

Japanese green tea is delicate and can easily become bitter if brewed at too high of a temperature. The ideal temperature for brewing Japanese green tea is between 160°F to 180°F ( 70°C to 80°C ).

If the water temperature is too hot, it can cause the tea leaves to release tannins and other compounds that can give the tea a bitter taste. 

Additionally, when brewing Japanese green tea, it's recommended to steep the tea for no more than 1-2 minutes, as over-steeping can also cause the tea to become bitter.

By brewing Japanese green tea at the correct temperature and steeping it for the appropriate amount of time, you can enjoy a delicious and refreshing cup of tea with a delicate and subtle flavor.
